La Langouste

The langouste, or spiny lobster, is a member of the crustacean family. Langouste is often associated with the red lobster when there are several varieties. Lobster is of course known for its delicate flesh, making a fine meal. Lobsters are a significant economic resource for many coastal regions. Their often excessive over-fishing has reduced their presence in their favorite environment: the rocks where they shelter under their spiny shell. Larval lobsters live first as tiny bits of plankton and conduct a metamorphosis to become lobsters. Lobsters molt often: throughout their lives they lose their armor and regenerate in order to grow larger.
