Geology: Our estate is made up of three different terroirs:
- Ravagnola (10 ha): Clay-limestone slopes located by the sea. The subsoil is composed exclusively of limestone dating from the Mesozoic. The vines range from 20 to 100 meters above sea level, at about 100 meters from the sea. - Gritole (2 ha): It is a more heterogeneous plot than Ravagnola from a geological point of view. The soil consists of clay and limestone with a mixture of erosion of secondary limestone and old alluvium. The plot is a little more inland but all the same in the valley which opens directly onto the sea, about 800 meters away. - Grotta Di Sole (2.5 ha): his plot is much more inland, on slight hillsides. The soil is clay-limestone with schist surfacing (erosion of limestone and nummulitic conglomerates from the Mesozoic).
Presentation of the wines: AOC Patrimonio reds: - Ravagnola 2014: 100% Nielluccio 50 years old. Destemming, cold pre-fermentation maceration for 3 days, then 12 days of vatting. 12-month aging in stainless steel. - Gritole 2014: 100% Nielluccio 25 years old. Destemming, 10-day maceration. 12-month aging in concrete vats. - Amphora 2014: 100% Nielluccio 50 years old (from Ravagnola). Destemming, cold pre-fermentation maceration for 3 days, then 12 days of vatting. The maturation is carried out in 160 litre amphorae. It is still in progress; we are thinking of bottling it around May to launch it on the market in July. AOC Patrimonio whites: - Grotta Di Sole 2015: 100% Vermentino. Direct pressing of unstemmed berries. Slow fermentation in temperature-controlled stainless-steel vats. Aging in concrete vats. It will be available from February / March. - Amphore 2015 (obtained through maceration): 100% Vermentino. Harvest in small crates, manual destemming, then 1-month maceration in a 320-liter amphora. The maturation is still ongoing, we plan to bottle it in May to be sold in July. AOC Patrimonio rosés: - Rosé d'une nuit : 100% Nielluccio. Direct pressing of 95% of the vintage and an incorporation of 5% of a bleeding from a vat of red wine that has macerated overnight. Vinification and maturing in stainless steel. It will be available from February / March. - Cuvée Julie: 95% Nielluccio - 5% Vermentino. Direct pressing. Vinification and maturing in stainless steel. It will be available from February / March. Muscat du Cap Corse (Natural Sweet Wine): 100% Muscat Petits Grains. Direct pressing of the grapes, mutage in wine alcohol according to the traditional method of AOC Muscat du Cap Corse.
